Whipped Butter Tower with Rosemary & Lemon
The perfect appetizer to enjoy with family and friends this festive season. 🧈✨
Ingredients:
- 5 sticks (2 1/2 cups) unsalted European butter, softened
- 3 tbsp fresh rosemary, finely chopped
- Zest of 2 large lemons
- 1 1/2 - 2 tsp sea salt (adjust to taste)
Instructions:
- Prep the Butter: Let the butter sit at room temperature until soft but not melted.
- Whip the Butter: In the bowl of a standard mixer fitted with the whisk attachment, whip the butter on medium-high speed for 5-7 minutes, scraping down the sides occasionally. The butter should become pale, almost white, and very fluffy.
- Add Flavors:
- Add the rosemary, lemon zest, and 1 1/2 tsp sea salt.
- Whip on low speed until evenly combined (1-2 minutes).
- Taste the butter at this point — if you want it even saltier, add the remaining 1/2 tsp and whip for another 1 minute.
- Build the Tower: Use a piping bag or spatula to create a tall butter “tower” on a serving platter or bowl. You can pipe swirls or layer for a rustic look.
- Chill & Serve: Chill the butter tower for at least 30 minutes to help it set or keep at room temperature if serving immediately.
Serving Suggestions:
- Sprinkle flaky sea salt on top for an extra hit of saltiness
- Garnish with rosemary sprigs, lemon zest, or edible flowers
