Spring Detox Salad
Glow from within with this Spring Detox Salad 🌿✨
Snap Pea and Smoked Salmon Salad Ingredients:
- 2 cups snap peas, trimmed
- 2 cucumbers, sliced
- 1 cup arugula
- 150g smoked salmon, thinly sliced
- 100g feta cheese, crumbled
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh mint leaves, chopped
- 2 tablespoons Dijon mustard
- 3 tablespoons olive oil
- Juice of 2 lemons
- Salt and pepper to taste
Directions:
- In a large bowl, combine the snap peas, arugula, and sliced cucumbers.
- In a small bowl, whisk together the Dijon mustard, olive oil, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the snap peas and cucumber mixture. Toss until well coated.
- Add the smoked salmon and crumbled feta cheese on top of the dressed salad.
- Serve immediately and enjoy your delicious
