Spring Detox Salad

Glow from within with this Spring Detox Salad 🌿✨

Snap Pea and Smoked Salmon Salad Ingredients:

  • 2 cups snap peas, trimmed
  • 2 cucumbers, sliced
  • 1 cup arugula
  • 150g smoked salmon, thinly sliced
  • 100g feta cheese, crumbled
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh mint leaves, chopped
  • 2 tablespoons Dijon mustard
  • 3 tablespoons olive oil
  • Juice of 2 lemons
  • Salt and pepper to taste

Directions:

  • In a large bowl, combine the snap peas, arugula, and sliced cucumbers.
  • In a small bowl, whisk together the Dijon mustard, olive oil, lemon juice, salt, and pepper to make the dressing.
  • Pour the dressing over the snap peas and cucumber mixture. Toss until well coated.
  • Add the smoked salmon and crumbled feta cheese on top of the dressed salad.
  • Serve immediately and enjoy your delicious
